“Big Mac” Salad

This is a delicious salad, make plenty, it’ll go fast!

I love a good Big Mac, but trying to order one without the bun just seems to confuse some of the workers at the counter. So instead of going through that rigmarole, I decided to make me a Big Mac at home, in the form of a salad.

This will quickly become a favorite at your home if you’ve ever had a Big Mac. Make plenty, because it will go fast, and they come back for seconds!

Ingredients

  • 1 lb Ground Beef


  • 1/4 tsp Black Pepper

  • 1 tsp Sea Salt

  • 8 oz Romaine Lettuce (can use iceberg)

  • 1 cup Tomatoes (chopped)

  • 3/4 cup Shredded Cheddar Cheese

  • 1/2 cup Pickles (diced)

  • 1/2 cup Mayonnaise

  • 2 tbsp Pickles (diced)

  • 2 tsp Mustard

  • 1 tsp White Vinegar

  • 1/2 tsp Smoked Paprika

  • 1 1/2 tbsp Powdered Erythritol

Directions

  • Cook ground beef in a skilled over high heat. Season with sea salt and black pepper. Stir fry, breaking up the pieces with a spatula, for about 7 – 10 minutes, until the beef is browned and moisture has evaporated.
  • Meanwhile, puree all the dressing ingredients in a blender. If dressing is thicker than desired, thin it out with some water, or oil and puree again. Adjust sweetener to taste. Refrigerate until ready to serve.
  • Combine the remaining salad ingredients in a large bowl, add the ground beef and toss with the dressing.
