I’m a huge fan of breakfast, I could literally eat “breakfast” food all day everyday. There are so many different things you can have for breakfast, I would never get bored.
But some of my favorites like pancakes, French toast, biscuits and gravy, eggs Benedict, had to be removed from the menu, that is until we got creative and turned even those favorite breakfast foods into ones I could enjoy while living the low carb lifestyle.
Today, we bring you low carb pancakes, enjoy.

Make plenty of these delicious pancakes if you have company, they will fly off the plate.
- Whisk all ingredients together in a bowl until smooth. Batter should be the consistency of typical pancake batter. If it’s too thick, add a little more milk. Do not add too much, or the pancakes will be too “wet”
- Preheat an oiled pan on the stove over medium low to medium heat. Drop the batter onto the hot pan and form into circles.
- Cover and cook about 1.5 – 2 minutes, until bubbles start to form. Flip and cook another 1.5 – 2 minutes, until browned on the other side. Repeat with the rest of the batter.
- For best flavor, fry the pancakes in Ghee. If you use butter, you will likely burn the pancakes, or you need to watch them very closely.
