Low Carb Breakfast Casserole with Bacon

This casserole is super easy and quick to make, with only 10 minutes of prep, make it on Sunday, and enjoy a delicious breakfast all week.

Ingredients

  • 1 lb No Sugar Bacon (chopped)

  • 4 cups Radishes (shredded)

  • 1/2 Medium Onion (chopped)

  • 12 Large Eggs (beaten)

  • 1 lb Shredded Cheddar Cheese

  • 15 oz Ricotta Cheese (or Cottage Cheese)

  • 1 lb Swiss Cheese (chopped)

Directions

  • Cook bacon and onion over medium-high heat until bacon is fully cooked. Drain the grease off.
  • In a large bowl, combine bacon, onion, radishes, eggs, cheddar, ricotta and Swiss cheese.
  • Pour mixture into a greased 9 x 13 casserole pan.
  • Bake at 350 degrees until eggs are set (about 45 – 50 minutes)
