This casserole is super easy and quick to make, with only 10 minutes of prep, make it on Sunday, and enjoy a delicious breakfast all week.

1 lb No Sugar Bacon (chopped)
4 cups Radishes (shredded)
1/2 Medium Onion (chopped)
12 Large Eggs (beaten)
1 lb Shredded Cheddar Cheese
15 oz Ricotta Cheese (or Cottage Cheese)
1 lb Swiss Cheese (chopped)
- Cook bacon and onion over medium-high heat until bacon is fully cooked. Drain the grease off.
- In a large bowl, combine bacon, onion, radishes, eggs, cheddar, ricotta and Swiss cheese.
- Pour mixture into a greased 9 x 13 casserole pan.
- Bake at 350 degrees until eggs are set (about 45 – 50 minutes)
